Here's a simple recipe for Paneer Butter Masala without onion and garlic:

Ingredients:

200g Paneer (cottage cheese), cubed

2 Tomatoes, pureed

1/2 cup Cashew nuts, soaked in water for 30 minutes

1/2 cup Milk or cream

2 tablespoons Butter

1 tablespoon Oil

1 teaspoon Ginger paste

1 teaspoon Cumin seeds

1/2 teaspoon Turmeric powder

1 teaspoon Red chili powder (adjust to taste)

1 teaspoon Garam masala

1 teaspoon Kasuri Methi (dried fenugreek leaves), crushed

Salt to taste

Fresh coriander leaves for garnish

Instructions:

Heat oil and 1 tablespoon butter in a pan over medium heat.

Add cumin seeds and let them splutter.

Add ginger paste and sauté for a minute.

Pour in the tomato puree and cook until the raw smell disappears and the mixture thickens.

Meanwhile, grind the soaked cashew nuts into a smooth paste using a little water.

Add the cashew paste to the tomato mixture and mix well. Cook for a few minutes.

Add turmeric powder, red chili powder, garam masala, and salt. Mix everything together.

Pour in the milk or cream and stir to combine. Let it simmer for a few minutes.

Add the paneer cubes and cook for another 5 minutes, allowing the flavors to meld.

Crush the kasuri methi between your palms and sprinkle it over the paneer.

Finally, add the remaining tablespoon of butter and give it a gentle stir.

Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
